I went to Carnivale in Venice 10 years ago so perhaps other Ziners have more recent expereince. My recollection is that for the most part I enjoyed just wandering around Venice observing the costumes that ran the gamut from elaborate to outrageous to just mask and cape (I believe there is a traditional Carnivale cape). So one decision might be whether you're going to costume yourselves.
Of course, just experiencing Venice is a great time.
There was a big send off to end Carnivale Fat Tuesday night in St. Mark's Square, and it was jammed. One caveat: the year I went it was cooold and the wind off the Adriatic was wicked so take along something like thermal underwear and gloves.
