We have stayed in youth hostels when we traveled with our children in Switzerland and Germany. In other places we stayed in small hotels or B&B's.
As for Naples, you might want to consider staying in Sorrento rather than Naples itself. We spent 5 nights in Naples a year or so ago and it is a zoo! You can take a commuter train from Sorrento to Pompei and Herculaneum.
