I second Joan's recommendation regarding Poland.

One more thing regarding money - if you're planning to add Romania to your itinerary, be aware that the currency has recently been revalued. The so-called "Heavy Lei" has several zeroes less than the old (insanely inflated) currency, and I imagine prices will be rounded up to compensate.

In Hungary and Romania, hotels often prefer payment in cash, and are happy to take Euros or dollars. Romanian merchants will often demand a PIN number for credit cards - the solution is to request that they call the toll-free number on the card to verify the account.
