Lucy asked us to share "delicious and/or unusual food recipes" we've picked up while travelling and perhaps a bit of the story/cultural traditions behind the food. I'll start the ball rolling! Here's an unusual combination that I now make at home - Maltese style tuna sandwiches - Maltese ftiras. In Malta, they use a flat Maltese bread and spread tomato paste and olive oil and fill it with tuna, olives, capers. It's simple, good ingredients, rustic but it moves the tuna sandwich from ordinary into amazing. I use regular good quality homemade bread rather than the Maltese bread. The history? Well, Malta is a Mediterranean island close to Sicily. There is a strong Arab connection too. If anyone knows more, please share. Frances Toronto, Canada |
