Sorry, I have no recommendations for upscale places in San Ignacio. The charming little place I stayed in, on the river, had no air con, no TV, no telephone - just perfect, in fact. When are you going? We found it got so chilly at night at times we had to break out our space blankets for extra warmth, the spare bedspreads, ultra thin, provided by the hotel didn't cut it. There are quite a number of day tours you can take from San Ignacio, to Pine Ridge, the cave, etc. etc., all worth it - the cave tour is fascinating but can be a bit taxing.
If you can make your way to Ciudad de Flores, Guatemala, it's very easy to catch a bus to Tikal ... well worth the visit. I should think it's possible to get to Flores from San Ignacio as there's a coach depot in San Ignacio. Definitely from Belize City, though.
