It would be helpful if you could be a little more explicit about what sort of setting and amenities you prefer, as there are hundreds of places that could fit the bill. You might also want to consider the coastal area north of San Francisco or the Napa/Sonoma area in addition to (or instead of) the Monterey Peninsula. Depends on whether you like the crowds, prefer cute little shops, or just want a scenic beach.

(Personally, if I had one night to spend anywhere in the area, I'd head for Calistoga, and just about everything in that area is under $200--but it's not on the coast.).
