You might consider Belize, with a side trip to Tikal, the Mayan ruins in Guatemala (there are others of course). Belize is mainly English speaking, not as touristed or exploited as Costa Rica, and there are some good nature forests walks, such as the Cockscombe Jaguar Reserve in the south. People have seen jaguars there, unfortunately I didn't. And the exploring the huge caves or Pine Ridge near San Ignacio. Then there are the Cayes to visit if you like snorkelling, and the Blue Hole for diving.

I actually much prefer Belize to Costa Rica, but that's just a personal thing.
