It has been over ten years since I was in Puglia, but I enjoyed it quite a lot. Unfortunately, I have no personal experience with renting a property there because I stayed in a hotel.

The company which I can recommend-The Parker Company- http://www.theparkercompany.com does not seem to have much on their website in Puglia. You might try telephoning them. They are a good company to do business with.

I have heard good things about http://www.holiday-rentals.com and http://www.ownersdirect.co.uk but do not have personal experience with them.
