We are traveling to China on a private tour in September and have justed added about 36 hours of free time in Hong Kong before our return to the states. With limited time, we want to be sure we see as much as possible! What are the "must sees"?

We are very interested in dim sum and would appreciate the name(s)of restaurants/tea houses that specialize in dim sum. Are the evening harbor cruises during the light show worthwhile? And what about shopping...what great item should we purchase to take home as a reminder of this trip and where can we find it?
