We normally book our flight first because we are more flexible about our accommodation. If I wanted to book a gite in France on available for certain dates, I would book that first, then my flight.

About best days to fly - well, prices seem a bit erratic. When we booked with Air France, we found that a return on Sunday was very pricey, so we picked Saturday. When we looked a few weeks later (just second-guessing myself!), Saturday was more expensive than Sunday.
